Wilding announces exclusive Barolo & Truffle evening, in celebration of Piedmont's finest pairing
Two of Piedmont's most revered exports will come together at Wilding in Oxford on Wednesday 22 November during a special Barolo & Truffle dinner event. New head chefs, Michael Carr and Ben Wood, have created a five-course seasonally-led menu that pays homage to the luxurious and earthy flavours of truffle, which will be paired with wines hand-selected by owner and wine director, Kent Barker.
Encapsulating the collaborative wine-forward dining experience that has been cultivated at the Oxford-based neighbourhood restaurant, this event will present dishes that showcase truffle’s distinctive allure. With some of the best examples of this elusive fungi often found in Piedmont’s truffle-rich soil, the region’s ‘Wine of Kings’ makes for a perfect pairing, with the rich, complex flavours of Barolo complementing the truffle’s earthy intensity.
Bringing many years of Michelin star cooking experience to bear on the menu, Michael and Ben will begin with snacks of Crispy Black Truffle and an English Muffin with Homemade Pastrami and Wiltshire Truffle Slider. Trompette Mushrooms with a Slow Cooked Burford Brown Egg, Caramelised Pumpkin and a Shredded Truffle & Cob Nut Dressing will be the evening’s starter, before a fish course of Confit Halibut with Black Truffle Ravioli and Grapefruit & Champagne Sauce. A main of Braised Beef Shin with Caramelised Onion and White Truffle Polenta will follow, finishing with a Caviar & White Truffle Soft Serve.
Upon arrival, guests will be served a glass of 1701 Franciacorta Brut DOCG, NV, with the evening’s wine pairings including a White Vietti Roero Arneis, a Red Prunotto Nizza Bansella, a Red Nervi-Contero Gattinara, a Prunottos Single Vineyard Barolo and a Moscato d'Asti, Prunotto to accompany dessert. These wines have been meticulously selected by Kent to work in harmony with each dish, while offering a glimpse into Wilding’s 400-strong wine list with an emphasis on organic, biodynamic and sustainable production.
Wilding’s Barolo & Truffle evening will take place on Wednesday 22 November from 7pm. Tickets cost £95 per person for the full food and wine paring menu, and are available to purchase online.
